Crock pot pizza!!!

You read that right I made upon request I have made crock pot pizza! It was pretty amazing it only took a good amount of time but that was my own choice. This recipe talks about using Pillsbury refrigerated dough. Instead of using that kind of dough I went another route and decided to make my own dough from scratch. It is better that way in my own opinion (but then again I have not attempted it the other way either). Another suggestion is that you should poke the dough before cooking it because if you do not then it will create air bubbles (which I learned from working at pizza hut). I would make this recipe only if you wanted a deep dish style pizza and if you are feeding for two depending on the style of crockpot that you have. Whether it is the smaller circle style one (feeds 1-2 people/adults) or the larger oval one (probably feeds more but im not sure how many). I would give this recipe a 5 out of 5 it was really good and it tasted amazing! The two links I am going to post with this is a dough recipe from one link and the crockpot instructions on the other link. Keep in mind that these both come from my pintrest and that I would suggest you follow my pintrest board "things I have made or Tried" because I pin all the stuff that I have personally tried and you can always comment below if I truly did like it or if I changed something in those pins.

I do not have a picture of this next quick link but it is amazing! I made these home made brownies and I did add nutella as well as dark chocolate chips to this recipe probably more then they tell you to but who cares on how much you use because according to Dan you can never have enough chocolate chips. And for everyone else who would just like a quick update on the family, we have started another semester of school it will be my hopefully last semester for my associates degree and Dan's second semester of is masters degree in Health Care Administration. Remington is doing well but is going through a little bit of mommy phase where all he wants is me which I can not complain about but sometimes I need a break and I know Dan wants some close Remy time as well. Lexy is doing well she is being more and more lazy lately and staying in our room most of the day but I think that is because someone is almost always home so she gets a little tired of people being home and wants her own little bit of alone time herself.

6 months old, Christmas time and a new crock pot recipe to try

Happy Holidays and everything else in between. I know I have let all my readers down by not posting in a while but as the holidays came in full force this year I was forced to put this on the back burner for a while.

This past month has been a crazy one with Christmas, work, finishing the semester and family coming into town I felt that I did not have all the time in the world to get everything done but I did some how. This month Remington turned the big 1/2 birthday! It is so sad that this time is going to fast but it is fun to see how the new things he is always learning. He is so close to crawling each day, some days he will move one hand forward and others he will just arm crawl or do the worm every where he goes. Not only is he close to crawling but his first tooth is coming in nice and sharp. I am always checking his mouth looking at it each day just watching its progress little by little coming in and touching it. Remington also is close to sleeping through the night. He only wakes up to get a diaper change but soon that will change as I will go out and buy those overnight super absorbent cloth diaper inserts so that he will be set all night long. Remington is not only doing those things but he really enjoys laughing and holding the bottle all by himself, I think he would feed himself if I would let him but I know he isnt ready for that just yet. Most days he loves to just lay on the ground and hang out all by himself but lately he has become more clingy which is weird for Dan and I because he typically is just a chill baby and wants to hang out. My in-laws came to town this Christmas and Remington made out like a bandit from them which was really nice. He got lots of new books, a couple of toys, and some fun shirts/onesies/pajamas from my siblings.



Dan finished his first semester of grad school with flying colors! He did such a great job with school this past semester that I do not know how he does it! I mean he has me, Remington, Lexy, homework, and test all at the same time and still manages to do well. This year for Christmas I got Dan a straight edge kit to practice with since his brother got him a sharp one and he is so excited to try it out that he will shave his massive beard!!! Wait what you said he is going to shave his beard??? You heard right he is willing to shave his beard just to use his straight edge.... It will be a sad day when that beard is gone.

Me, well I have finished my first entire semester of online school and it was a lot more work than I thought it would be but at the same time what else did I expect. I was just always doing tons of homework and my test/quizes were always either piling up in one class or another which was kind of hard to deal with because either they all had things due the same day or they would not open up until later in the week when I would want to get ahead start on all the school work. I finally have had a vacation from work due to school being out there is no work which is nice but kinda of not nice at the same time. Next semester will be my last one for my associates degree which has taken me years to get done but I am so happy it is finally within arms reach. It always seems that once I start school something happens and I stop going again. This past semester almost had me stop again. I have one semester left and one of my required classes I need to graduate is a math class and they offer it online for my school but through another program which I am not apart of so for over a month I had been calling all sorts of people to get them to let me take it online due to living out of state. I did not care what I had to do but I would do it. I would get a lot of people saying they could help me but then weeks later stating that they could not help like they thought they could. But the light finally opened up when I got a hold of a man who said he would make sure to help me as much as he could.He put me in contact with all the right people to were I am now enrolled in that math class through another school but he did make sure it would transfer over when I was done. I was so excited, months of hard work is finally paying off and all I have to do is pass this math class and I will feel somewhat accomplished until I get my Bachelor's degree in a couple of years. This past semester doing a full course load, working part time, and being a mom I still somehow managed to take 14 credit hours online and pass all my class 2-A's 1-B and 1-Passing grade (don't ask it was chemistry).

Lexy, she has had it really rough lately. This past year some of my readers may know that she had a fox tail get stuck in her mouth earlier this year and it got infected and now she has bladder stones. For a good while she was even peeing blood and you could tell she was not feeling well because she would barley run up the stairs. It was sad to see her like that but we have been giving her medicine and now she eats a special food and is doing a lot better. Lexy also recently turned 6 years old and she is the best dog I have ever known. She loves to snuggle all day and night. She truly is the best dog a girl could ever ask for.


Last but not least, my newest Pintrest meal/recipe that I have tried and loved was Texas Roadhouse Rolls. It was a copy cat recipe that I found and I personally would say it came really close. We had the LDS missionaries over for Christmas dinner and I made them for dinner and one of the Elders probably ate like 5 and I had made 24. This recipe also came with their copycat honey butter recipe which we are still using. 5 Month old baby boy and Crock pot chicken parm!

This blog will be a little bit of both worlds it will talk about what is going on and it will also talk about a pintrest recipe that I tried this week that was a keeper.

Well Remington is 5 months old now and loves to roll over both ways, from front to back and from back to front. He is having fun making more and more noises each and everyday. Remy is becoming bashful with everyone and it is so cute. Eachwas time I or Dan come home from work, or school we greet him with a smile and a kiss to which he responds with a smile and a turn of the head. He really enjoys to giggle and do push ups with his upper body. I think he will soon be able to sit up all on his own and maybe crawl but who knows. We have been trying solids with Remington like cereal, which he really enjoys. We are going to try green beans soon as well as avocados. My baby boy sure does love to smile. He truly is a really good baby unless you miss the window to put him down for a nap and boy will he tell you that he is tired but yelling and screaming his little lungs and heart out. It is truly amazing to see how fast he has grown and how much he has learned in such a little amount of time.


Dan and I have just a couple of weeks left of the school semester which I am sure we are both so ready for. Each of us are working our butts off to finish strong and pass all our classes. I hope to be able to only have one semester left once this one is over. Dan will have made a dent in his master degree program. We both want to just hurry up and finish school so that we can rest just a little bit and not have to worry about test, and quiz's. You know all the things in life that don't really matter because in the real world they don't say hey pop quiz! Now if you pass this quiz you will get a lolly pop or anything like that. Why is it they kill us on all these test anyways when no one will ever ask how did you do on that test in college about the culture in Africa. But what do I know!

Anyways lastly I made this amazing crockpot dish the other day that I will just have to share! It only takes 5 ingredients! Thats right I only said 5.

Chicken (I only used 2 and they were frozen so I defrosted them for about 10 min.)
1 1/2 to 2 cups of seasoned bread crumbs
1/4 cup of parmesan cheese (I use the green can.)
Jarred spaghetti sauce (I used home canned but use your favorite)
Mozzarella (grated)

The only thing I modified from the original recipe is the amount of chicken used (they used 6)as well as the amount of parmesan cheese used because I did not have as much so I just used what I needed or wanted on top at the end.

Pesto Crock Pot Chicken

So this is my first post about food that I have made from Pinterest. I have always enjoyed making food from pinterest and trying out new items from them. I decided to try a crock pot meal for my first entry. The entry is pesto chicken in a crockpot. The original recipe comes from http://picky-palate.com/2012/09/20/pesto-ranch-crock-pot-chicken-thighs/.
The Recipe calls for :
Chicken (frozen or thawed out, I used frozen)
Basil Pesto
Ranch dry mix
Chicken Broth
Pam( I added this to spray on the inside)


I put this recipe together with in 5-10 min. and let it sit in the crock pot on high for about 5 hours for extra tender chicken. The original recipe states to cook it on high for 3-4 hours or 6-8 on low. I do not know about you but I always have to cook it on high because I never know what I want to make for dinner that early enough in the morning to put this in the crock pot. Recipe :
1 1/2 pounds baby red potatoes, quartered
2 tablespoons olive oil
2 tablespoons coarsely chopped fresh rosemary
Coarse salt and freshly ground pepper

At 425 for 30 min. (I added some lemon juice on top and cooked for another 10 min. This gave it a little extra kick of flavor.)

In the end after making these two recipes from my Pinterest board I would make this again. The only thing I would change would be in the pesto chicken recipe. I would not add any chicken broth because of the fact that when you make any type of chicken in the crock pot it lets off chicken juice which adds more watery type liquid. When we ate the food it became super liquidy and it dripped all over the plate. I personally do not like that but it wasn't to bad. Now with the potatoes besides adding a little extra cooking time and lemon juice I loved them! They were nice and soft and cooked to perfection. He is 4 months old and Jen came to visit

So much has happened this month it is just crazy! A major highlight from this past month was that my sister was able to come visit this month and it was so nice to have her and Skyler here. So let the rambling begin....

This month Jen came to visit along with Skyler her daughter. We had so much fun having her here but we were so busy with school and work that we tried to make sure she had a good time and visited some things while they were here. Jen visited some fun things while I was working and doing school work. It was nice that Remy got to see his cousin and Aunt too. Jen, Skyler, Remy, and myself all went to the zoo together which even though some of the exhibits were closed. We also all went to the St. Louis Arch. It was so fun to have them in town and listen to Skyler tell us that Jen is not Jen she is mommy. So every time me or Dan would say "hey Jen" Skyler would yell noooo mommy. It was funny because after that anytime we would talk to her we would have to refer to her as mommy.

Remington went to his first trunk or treat this past week and we dressed him up as Charlie Brown, Lexy was painted as Snoopy, Dan was Linus, and I was peppermint Patty. No one could tell that Dan and I were part of the get up but thats okay. Some people in our ward did a great job decorating their trunks. We ran out of time to decorate ours so we just stuck Lexy's bed in there along with some blankets for Remington to lay down on while we handed out candy. Lexy was a big hit though with all the kids, because she is so shy that everyone wanted to pet her. Well Remington turned 4 months old this month and the biggest things that he can now do is roll over all on his own from his back to his stomach, and even sometimes from his stomach to his back. He enjoys laughing and being sung to when he gets upset. I can not believe how big he is getting....The doctor has told me that he is ready for solids which we are not to sure or even ready for ourselves. So next month I think we will start solids.

Lexy is doing well and is making friends. For those who know Lexy know that she is not one to like other dogs. Some friends of ours came over the other day and brought their dog with them and so we got to see how Lexy would interact with their dog because usually she wants nothing to do with other dogs but this dog she actually played with every once in a while. It was really cool to see Lexy actually play with another dog for once. For the trunk or treat we took Lexy to a local Petsmart to get decorated like snoopy. I have always loved going to Petsmart and go to them for everything but this time not so much! They got paint in her ear and places that were not supposed to have paint on them. I was highly upset about it. Luckily for them I took Lexy anyway and did not say anything about it and took about 30 min. and cleaned off those areas myself.
Dan has been working hard at school and it never seems to stop. He is always writing papers or doing a project for class. He just finished his fall break and really needed it to unwind. The thing is how is a 2 day break considered a break? In my mind especially for grad school is that they should have a week off for a fall break. Dan dresses up everyday for school as if he worked in a hospital already which is kind of nice but at the same time if I had to do that everyday I think I would go a tiny bit nuts, I then would get over it but still skirts sometimes drive me up the walls. Dan does well though and he always figures it out.

I have been going to school non-stop since I started my online program and it never seems to stop. Every week I try to start everything early so that I can have more then just one day off from school work but it never happens. I always only have Sundays to relax and even then I feel like there is not enough time in my day to get everything done I need to get done. Every week I can't wait until the week is over and I just hope that school is almost over but then I look at the calendar and notice that there is "x" amount of weeks left until the semester is over and I can rest for about 3 weeks before the next one starts. This semester I think I took on more then I can handle by taking an online class in Chemistry. Now for some people they think it is easy as pie but for people like me its like trying to fit a elephant in a mouse hole. Luckily we have home teachers in this ward ones who actually try to help you. Chris our home teacher has been so nice and comes by to help me with my Chem labs each week. It is so nice to have people in our ward who want to actually help and they offer it so quickly. I may not get an A or a B in this class but if with his help I get a "C" I will be sooooo grateful for.

3 months to old

Hello all you bloggers out there and my readers (if you are there), welcome back to my blog! This past month we have ventured out to many different things. So lets hop to it...

This past month Dan has done a lot of school work and so have I. Dan is always reading a book for school and doing so many papers almost everyday. Some days I think that by the end of grad school he will turn into a sheet of paper or a printer because he writes so many of them constantly. Dan goes to school Monday through Thursday and gets Fridays off which is nice for me and Remy so that he can spend time with us instead of time with school. Lucky for us though Dan's school is really really close so close that I drive him to school in the mornings and he walks home when he is done. It is only about a mile and a half away so it only takes him about a half hour to get home from school. Dan got some new school clothes for school so that he can look and feel the part of is future career. Everyday he wears business casual or a suit. On Thursdays he always wears a suit due to the fact that potential employers could be visiting his class that day. The school St.Louis University has many different campuses and some have really cool artwork around the buildings.
I started my online classes this semester and boy is it hard and different. Before leaving Idaho I knew I only had about 2 semesters left of school so instead of transferring and losing some of my credits I decided to take the rest online. I knew it would be hard but a lot of my work is really busy work and it really bothers me because I have Remy and a job as well. It is really annoying when I am doing my online classes and emailing with my teacher and she tells me to check my spelling when I email, which I do, but she will respond back to me with something like this " Jesse you need chek spelling once sending" its all really annoying. Now I know I am a horrible speller but at least i do not tell a student to check spelling and then in return never spell correctly or leave out words when responding back to her emails. Anyways I went back to work this month and now work once again at the "Y". I have worked there many times before and loved it so applying there was nothing. I work at 2 different after school and morning school programs. When I go to work Dan becomes a stay at home dad. He does pretty good and gets better with Remy each day. He always tells me that its like Remy knows that I have left because every time i leave Remy screams his head off. It makes me feel loved but at the same time I feel bad for Dan every time it happens.

On a side note Dan,Remy and I went to the Budweiser factory for a tour. The offer free tours to the public. It was really neat to see and go through. We got to learn how to make beer and what they use to make beer. ( useless information for us as we do not drink). It was really informational and a fun thing to do on labor day weekend.

Remington just turned 3 months old yesterday and it is sad to see him get bigger but it is also fun to see him grow and learn new things. This past month he has fallen in love with touching his toes and talking to anyone and everyone he can. Something else that he has started to do is grab, and when I mean grab I mean my hair! My hair is not super long but when he gets a hold of it he grabs it and holds tight. Sometimes he will grab my shirt and pull the crap out of it. Im sure all my nice and even then t-shirts I love will eventually have a huge scoop neck once he is done with that stage. So if any one wants one of those scoop neck shirts, send them my way and it will get the stamp of approval by Remy. He is such a good baby and so fun to love. He got a frog type blanket at his baby shower from a friend and he just loves it, so far that is his favorite toy to date.

Lexy! We never forget about her. She is doing well and is always wanting more and more snuggles these days. Whenever Remy is sleeping she is the first one to my side to snuggle and get all the attention. Lexy is as always doing better with Remy little by little. She still I don't think is quite sure what he is but just knows that he has not left yet. Lexy has been getting lots of extra attention lately due to I am a sucker for her puppy eyes every time I leave to pick up Dan or drop him off she will be coming for the ride. Dan and I have been running a lot lately and I bring the running stroller I got, and Lexy in hand. It is tough sometimes when running with both Remy in the stroller and Lexy on the side but if we go to a certain park she does really well.

Well as always I ramble a lot and you have to deal with it! So have a great month, day, week, night etc. and remember the buzzy B's will be back again next month! One more thing to say
