5 Month old baby boy and Crock pot chicken parm!

This blog will be a little bit of both worlds it will talk about what is going on and it will also talk about a pintrest recipe that I tried this week that was a keeper.

Well Remington is 5 months old now and loves to roll over both ways, from front to back and from back to front. He is having fun making more and more noises each and everyday. Remy is becoming bashful with everyone and it is so cute. Eachwas time I or Dan come home from work, or school we greet him with a smile and a kiss to which he responds with a smile and a turn of the head. He really enjoys to giggle and do push ups with his upper body. I think he will soon be able to sit up all on his own and maybe crawl but who knows. We have been trying solids with Remington like cereal, which he really enjoys. We are going to try green beans soon as well as avocados. My baby boy sure does love to smile. He truly is a really good baby unless you miss the window to put him down for a nap and boy will he tell you that he is tired but yelling and screaming his little lungs and heart out. It is truly amazing to see how fast he has grown and how much he has learned in such a little amount of time.


Dan and I have just a couple of weeks left of the school semester which I am sure we are both so ready for. Each of us are working our butts off to finish strong and pass all our classes. I hope to be able to only have one semester left once this one is over. Dan will have made a dent in his master degree program. We both want to just hurry up and finish school so that we can rest just a little bit and not have to worry about test, and quiz's. You know all the things in life that don't really matter because in the real world they don't say hey pop quiz! Now if you pass this quiz you will get a lolly pop or anything like that. Why is it they kill us on all these test anyways when no one will ever ask how did you do on that test in college about the culture in Africa. But what do I know!

Anyways lastly I made this amazing crockpot dish the other day that I will just have to share! It only takes 5 ingredients! Thats right I only said 5.

Chicken (I only used 2 and they were frozen so I defrosted them for about 10 min.)
1 1/2 to 2 cups of seasoned bread crumbs
1/4 cup of parmesan cheese (I use the green can.)
Jarred spaghetti sauce (I used home canned but use your favorite)
Mozzarella (grated)

The only thing I modified from the original recipe is the amount of chicken used (they used 6)as well as the amount of parmesan cheese used because I did not have as much so I just used what I needed or wanted on top at the end.

Pesto Crock Pot Chicken

So this is my first post about food that I have made from Pinterest. I have always enjoyed making food from pinterest and trying out new items from them. I decided to try a crock pot meal for my first entry. The entry is pesto chicken in a crockpot. The Recipe calls for :
Chicken (frozen or thawed out, I used frozen)
Basil Pesto
Ranch dry mix
Chicken Broth
Pam( I added this to spray on the inside)


I put this recipe together with in 5-10 min. and let it sit in the crock pot on high for about 5 hours for extra tender chicken. The original recipe states to cook it on high for 3-4 hours or 6-8 on low. I do not know about you but I always have to cook it on high because I never know what I want to make for dinner that early enough in the morning to put this in the crock pot. Recipe :
1 1/2 pounds baby red potatoes, quartered
2 tablespoons olive oil
2 tablespoons coarsely chopped fresh rosemary
Coarse salt and freshly ground pepper

At 425 for 30 min. (I added some lemon juice on top and cooked for another 10 min. This gave it a little extra kick of flavor.)

In the end after making these two recipes from my Pinterest board I would make this again. The only thing I would change would be in the pesto chicken recipe. I would not add any chicken broth because of the fact that when you make any type of chicken in the crock pot it lets off chicken juice which adds more watery type liquid. When we ate the food it became super liquidy and it dripped all over the plate. I personally do not like that but it wasn't to bad. Now with the potatoes besides adding a little extra cooking time and lemon juice I loved them! They were nice and soft and cooked to perfection.
